Ingredients:

For the Chicken Marinade:

* 500 grams of boneless chicken, cut into thin strips

* 2 tablespoons yogurt

* 1 tablespoon ginger-garlic paste

* 1 teaspoon turmeric powder

* 1 teaspoon red chili powder

* 1 teaspoon garam masala powder

* Salt to taste

For the Roll:

* 4-6 roti or paratha (Indian flatbread)

* 2 tablespoons vegetable oil

* 1 large onion, thinly sliced

* 1 medium-sized capsicum (bell pepper), thinly sliced

* 1 teaspoon chaat masala

* 2 tablespoons tomato ketchup

* Fresh coriander leaves, chopped

* Lemon wedges for serving

Instructions:

* In a bowl, combine the yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala powder, and salt. Mix well to make a smooth marinade.

* Add the chicken strips to the marinade and mix until the chicken is well coated. Let it marinate for at least 30 minutes or refrigerate for a couple of hours for the flavors to develop.

* Heat a grill pan or skillet over medium-high heat and lightly grease it with oil. Cook the marinated chicken strips until they are cooked through and slightly charred. Remove from heat and set aside.

* In the same pan, heat 1 tablespoon of vegetable oil and sauté the sliced onions and capsicum until they are slightly caramelized and tender. Sprinkle chaat masala over the vegetables and mix well.

* Warm the roti or paratha on a tawa or skillet until they are soft and pliable.

* To assemble the Kolkata Chicken Roll, take one roti or paratha and spread a tablespoon of tomato ketchup on it.

* Place a portion of the cooked chicken strips on one side of the roti, followed by a generous amount of sautéed onions and capsicum. Sprinkle some chopped coriander leaves on top.

* Roll the roti tightly, tucking in the filling as you go, to form a roll. Repeat the process with the remaining rotis and filling.

* Heat the remaining tablespoon of vegetable oil in a pan and place the rolls, seam-side down. Cook them for a minute or two on each side until they are lightly toasted and crispy.

* Remove from heat and cut the Kolkata Chicken Rolls into halves or smaller pieces, if desired. Serve hot with lemon wedges on the side.

Enjoy your delicious Kolkata Chicken Rolls!
