2 tablespoons vegetable oil
2 cloves of garlic, minced
1/2 cup firm tofu, diced

1 cup bean sprouts
2 green onions, sliced

For the Pad Thai sauce:
3 tablespoons fish sauce (or soy sauce for a vegetarian version)
2 tablespoons tamarind paste
2 tablespoons sugar
1 tablespoon rice vinegar
Instructions:
Soak the rice noodles in a bowl of hot water for about 15 minutes until they are soft but still firm. Drain and set aside.
In a small bowl, mix together the fish sauce (or soy sauce), tamarind paste, sugar, and rice vinegar to make the Pad Thai sauce. Set aside.
